This is a Santoku knife made of SK carbon steel by Shimomura, a company that produces many knives with strong personalities. The spine thickness is thicker than usual for a Santoku knife, but it can cut without any problem. Regarding the blade pattern, since it is printed, it will eventually fade away. Depending on how you sharpen it with a whetstone, it may disappear sooner. However, if you sharpen it at a shallow angle with a whetstone until the pattern fades, you can enjoy its wonderful sharpness. ・What is the meaning of the letters engraved on the blades? The blade’s right side is engraved with five letters. The first two signify ‘registered,’ the next two represent the name ‘Teruhide’ for this knife, and the last one means ‘work.’ By the way, the characters written on the handle’s sticker convey the same meaning. ・What is Sanjo Shimomura? This company was established in 1874 in Sanjo City, Niigata Prefecture. They manufacture and sell various types of knives. Many of the knives they make have their own unique characteristics.
